Our Story

Built on a single conviction: bread should taste like something.

Milk Road Downtown started the way good things do — with a frustration that the bread on everyone's table had lost its soul. No one in the neighborhood was baking the way it used to be baked. So we started.

Every morning at 3 a.m., our ovens are lit. We use a combination of wild and cultivated starters, long cold ferments, and flour milled within the region. The result is a loaf with a crust that shatters and a crumb that holds moisture for days.

Beyond the bakery case, we've built a grocery section that reflects the same standard — olive oils, vinegars, spices, and pantry staples we'd actually keep in our own kitchen. If we wouldn't serve it to our family, we don't stock it.

Long Fermentation

Every loaf rests 24–48 hours. Flavor develops slowly, gluten breaks down, and the crust earns its crunch.

Local Grain Partnerships

We work with mills in the Southeast to source stone-ground flour that hasn't been stripped and bleached into oblivion.

Zero Waste, Full Flavor

Stale bread becomes croutons and breadcrumbs. Scraps become stock. What's left feeds our sourdough starter.
